Most meaningful oyster: Big Tree Oysters - They are a beautiful oyster out of Copano Bay, Rockport, TX, that I feel rival many known names in the oyster trade. Amy and Seth are doing amazing work, every oyster is perfection in a half shell.
Favorite oyster to shuck: Big Tree Oysters and Pickle Points
Dream oyster destination: Generally speaking, Europe and Ireland, to taste and explore the varietals not easily acquired in the states.
Proudest oyster accomplishments to date: Utilizing solely TX Farm Raised Oysters in our restaurant, Southerleigh Fine Food and Brewing, training our staff on the importance of Oyster mariculture for TX and changing the publics perception of gulf oysters, one shuck at a time.
Favorite thing about being an OMG member: Meeting and networking with many like-minded, passionate individuals who all advocate for the importance of oysters is truly inspiring. It creates a vibrant atmosphere of shared knowledge and commitment to conservation.
